- 1 medium onion, chopped
- 2 medium carrots, diced
- 1 cup frozen peas
- 2 cloves garlic, minced
- 2 lbs Yukon Gold or Russet potatoes, peeled and cubed
- 1 cup beef or vegetable stock
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 4 tbsp butter (divided)
- ½ cup heavy cream (or milk)
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large skillet over medium heat, brown the ground meat. Drain excess fat.
- Stir in the chopped onion, carrots, garlic, and peas; cook until softened (about 5-7 minutes).
- Add stock along with thyme and rosemary; simmer for 10 minutes until thickened.
- Boil peeled potatoes until tender. Drain and mash with 2 tablespoons of butter and heavy cream until smooth.
- Spoon the meat mixture into a baking dish and spread mashed potatoes evenly on top.
- Bake for 25-30 minutes until golden brown.
