  • 8 oz (225g) cream cheese, softened
  • 1 cup (240ml) Bailey's Irish Cream
  • 1/2 cup (120g) sour cream
  • 3/4 cup (150g) granulated sugar
  • 1 tsp vanilla extract
  • 1 cup (100g) digestive biscuits or graham crackers, crushed
  • 1/4 cup (60g) melted butter
  • 2 tbsp cocoa powder (optional)

Instructions

  1. Preheat oven to 325°F (160°C). Grease or line a springform pan with parchment paper.
  2. In a bowl, mix crushed biscuits with melted butter until combined. Press firmly into the bottom of the pan to form a crust.
  3. Bake the crust for 10 minutes until lightly golden. Allow to cool.
  4. In another bowl, beat cream cheese and sugar until smooth. Add sour cream, vanilla extract, and Bailey's Irish Cream; mix until well combined.
  5. Pour filling over cooled crust and smooth the top. Tap gently to remove air bubbles.
  6. Bake for 50-60 minutes until edges are set but center remains slightly jiggly. Turn off the oven and let cheesecake cool inside for an hour before refrigerating overnight.
