- 5 tbsp melted butter (for crust)
- 2 tbsp granulated sugar (for crust)
- 24 oz cream cheese, softened
- 1/2 cup granulated sugar (for filling)
- 1 tsp vanilla extract
- 3 large eggs
- 3 Granny Smith apples, diced
- 3 tbsp butter (for apples)
- 1/4 cup brown sugar (for apples)
- 1 tsp ground cinnamon
- 1/2 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup brown sugar (for crumble)
- 4 tbsp cold unsalted butter, cubed
Instructions
- Preheat oven to 350°F (175°C). Mix graham cracker crumbs, 5 tbsp melted butter, and 2 tbsp sugar. Press into a 9-inch springform pan and bake for 8 minutes. Cool.
- Sauté diced apples with 3 tbsp butter, 1/4 cup brown sugar, and cinnamon over medium heat for 5-7 minutes until tender. Set aside.
- Beat softened cream cheese, 1/2 cup sugar, and vanilla until smooth. Add eggs one at a time on low speed until just combined.
- Pour half the batter over the crust. Spread sautéed apples over the batter, then top with remaining cheesecake mixture.
- Combine flour, oats, 1/2 cup brown sugar, and 4 tbsp cold butter with a fork until crumbly. Sprinkle over the cheesecake.
- Reduce oven to 325°F (160°C). Bake for 45-55 minutes until edges are set but center has a slight wobble.
- Cool at room temperature for 1 hour, then refrigerate for at least 6 hours before slicing.
