Ingredients

  • 3 Granny Smith apples, peeled and diced
  • 1/2 cup brown sugar
  • 4 tbsp unsalted butter
  • 1 tsp ground cinnamon
  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar (for crumble)
  • 4 tbsp cold butter, cubed
  • 2 cups heavy cream, chilled
  • 1 can (14oz) sweetened condensed milk
  • 2 tsp vanilla bean paste

Instructions

  1. Sauté diced apples with 1/2 cup brown sugar and 1 tsp cinnamon in butter until tender. Cool completely.
  2. Mix oats, flour, 1/2 cup brown sugar, and cold butter. Bake at 350F for 15-20 minutes until golden. Cool completely.
  3. Whip chilled heavy cream until soft peaks form, then fold in condensed milk and vanilla bean paste until stiff.
  4. Press half of the cooled crumble into the bottom of a lined springform pan.
  5. Fold the chilled apples into half of the ice cream mixture and spread over the crumble layer.
  6. Top with the remaining plain ice cream and sprinkle the rest of the crumble on top.
  7. Freeze for at least 6 hours or overnight before serving.
