Description

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1.5 tsp baking powder
  • 1 tsp ground cinnamon
  • 2 Granny Smith apples, peeled and diced
  • 1/4 cup brown sugar
  • 2 tbsp butter (for apples)
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 350F (175C) and line a cupcake pan with liners.
  2. Sauté diced apples with 2 tbsp butter, brown sugar, and a pinch of cinnamon until tender and syrupy.
  3. Cream together 1/2 cup softened butter and granulated sugar until fluffy.
  4. Beat in eggs one at a time, followed by vanilla extract.
  5. Whisk flour, baking powder, and cinnamon together, then fold into the wet ingredients until just combined.
  6. Fill cupcake liners halfway with batter, add a teaspoon of apple filling, and top with remaining batter.
  7. Bake for 20-22 minutes or until a toothpick comes out clean.
  8. Cool completely before frosting with a mixture of beaten cream cheese, butter, and powdered sugar.
