A creamy, traditional Finnish salmon soup featuring tender potatoes, sweet leeks, and fresh dill. A heartwarming Nordic classic.

- 1.4 lbs Salmon fillet, skinless, cubed
- 3 tbsp Butter
- 2 large Leeks, sliced
- 1.5 lbs Yukon Gold potatoes, cubed
- 4 cups Fish stock
- 1 cup Heavy cream
- 1/4 cup Fresh dill, chopped
- 1 tbsp Lemon juice
- Salt and black pepper to taste
Instructions
- Melt butter in a large pot over medium heat and sauté leeks until translucent.
- Add cubed potatoes and fish stock, then simmer for 10-15 minutes until potatoes are tender.
- Stir in the heavy cream and bring to a very gentle simmer on low heat.
- Add salmon chunks and poach for 3-5 minutes until just opaque.
- Stir in lemon juice, salt, and pepper.
- Remove from heat and fold in fresh chopped dill before serving.
