Description

A creamy, traditional Finnish salmon soup featuring tender potatoes, sweet leeks, and fresh dill. A heartwarming Nordic classic.


Ingredients

  • 1.4 lbs Salmon fillet, skinless, cubed
  • 3 tbsp Butter
  • 2 large Leeks, sliced
  • 1.5 lbs Yukon Gold potatoes, cubed
  • 4 cups Fish stock
  • 1 cup Heavy cream
  • 1/4 cup Fresh dill, chopped
  • 1 tbsp Lemon juice
  • Salt and black pepper to taste

Instructions

  1. Melt butter in a large pot over medium heat and sauté leeks until translucent.
  2. Add cubed potatoes and fish stock, then simmer for 10-15 minutes until potatoes are tender.
  3. Stir in the heavy cream and bring to a very gentle simmer on low heat.
  4. Add salmon chunks and poach for 3-5 minutes until just opaque.
  5. Stir in lemon juice, salt, and pepper.
  6. Remove from heat and fold in fresh chopped dill before serving.
