Description

A traditional Greek comfort soup featuring tender rice-filled meatballs in a silky, creamy lemon-egg broth.


Ingredients

  • 1 lb ground beef
  • 1/2 cup cooked rice
  • 1 small onion, finely minced
  • 1/4 cup fresh parsley, chopped
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • Salt and black pepper to taste
  • 6 cups beef broth
  • 2 large eggs
  • 1/4 cup fresh lemon juice

Instructions

  1. In a large bowl, combine ground beef, cooked rice, minced onion, parsley, cinnamon, nutmeg, salt, and pepper. Mix gently by hand.
  2. Roll the meat mixture into small meatballs, approximately 1 inch in diameter.
  3. Bring beef broth to a boil in a large pot, then reduce heat to a simmer.
  4. Carefully drop meatballs into the broth and simmer for 20-25 minutes.
  5. While meatballs cook, whisk eggs and lemon juice in a bowl until pale and frothy.
  6. Slowly whisk one ladle of hot broth into the egg mixture to temper it.
  7. Stir the tempered egg mixture into the pot on low heat until the soup thickens slightly.
