A rich, creamy copycat version of the famous chicken gnocchi soup featuring tender dumplings and fresh spinach.

- 2 tablespoons butter
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 lb boneless skinless chicken breast, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 package (16 oz) potato gnocchi
- 1 cup heavy cream
- 2 cups fresh baby spinach
- Salt and pepper to taste
Instructions
- Melt butter in a large pot over medium heat and sauté onion, carrots, and celery until softened.
- Add diced chicken and cook until golden brown on all sides.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and bring to a gentle simmer for 15 minutes.
- Add potato gnocchi and cook for 3-5 minutes until they float.
- Lower heat and stir in heavy cream and fresh spinach until wilted.
- Season with salt and pepper and serve warm.
