- 1 lb ground beef
- 1 packet taco seasoning
- 1 can (15 oz) black beans, drained
- 1 cup salsa
- 1/2 cup sour cream
- 8–10 medium flour tortillas
- 2 cups shredded sharp cheddar cheese
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- Brown ground beef in a skillet over medium-high heat; drain excess fat.
- Stir in taco seasoning and a splash of water, simmering until thickened.
- Mix in black beans, salsa, and sour cream until well combined.
- Spread a thin layer of beef mixture in the bottom of the baking dish.
- Place a layer of tortillas over the beef, overlapping slightly.
- Repeat beef and tortilla layers until ingredients are used, finishing with tortillas.
- Top with shredded cheddar cheese and bake for 20-25 minutes until bubbly.
