  • 2 cups granulated sugar
  • 4 large eggs
  • 1 cup buttermilk
  • 2 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup evaporated milk
  • 1 cup granulated sugar (for frosting)
  • 1/2 cup butter (for frosting)
  • 1 cup shredded sweetened coconut
  • 1 cup chopped pecans

Instructions

  1. Preheat oven to 350F and grease two 9-inch cake pans.
  2. Cream butter and sugar until fluffy, then beat in eggs one at a time.
  3. Sift flour, cocoa, baking soda, and salt together.
  4. Alternate adding dry ingredients and buttermilk to the butter mixture.
  5. Divide batter between pans and bake for 30-35 minutes.
  6. In a saucepan, simmer butter, sugar, and evaporated milk until thickened.
  7. Stir in coconut and pecans; remove from heat and cool.
  8. Layer cake with frosting and top with the remaining coconut pecan mixture.
