- 1 smoked ham hock or 1 cup diced ham
- 1 medium onion, finely chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth or water
- 2 bay leaves
- Freshly cracked black pepper, to taste
Instructions
- Rinse split peas under cold water until clear. Chop onion, carrots, celery, and mince garlic.
- In a large pot over medium heat, add 1 tbsp olive oil. Sauté onion, carrots, and celery until softened (about 5 minutes). Stir in garlic and cook for an additional minute.
- Add rinsed split peas and ham to the pot. Pour in broth or water and stir well.
- Season with bay leaves and black pepper. Bring to a boil, then reduce heat and simmer for about 60 minutes until peas are soft.
- For a creamier soup, blend part of the mixture using an immersion blender or transfer to a blender in batches until smooth.
- Remove bay leaves before serving. If using diced ham, sauté it separately until crispy and serve on top.
