Description

Tender chicken breast pieces coated in a zesty ranch-infused cornmeal crust and pan-fried to golden perfection.

Ingredients

Scale
  • 1.5 lbs chicken breast, cut into 1-inch cubes
  • 1/2 cup all-purpose flour
  • 1 tablespoon ranch seasoning powder
  • 2 large eggs, beaten
  • 1 cup yellow cornmeal
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons unsalted butter

Instructions

  1. In a shallow bowl, whisk together the flour and ranch seasoning powder.
  2. In a second bowl, beat the eggs until smooth.
  3. In a third bowl, combine the cornmeal, garlic powder, salt, and black pepper.
  4. Dredge each chicken cube in the flour mixture, shaking off the excess.
  5. Dip the floured chicken into the beaten eggs until fully coated.
  6. Press the chicken firmly into the cornmeal mixture until a thick crust forms.
  7. Melt butter in a large skillet over medium heat until bubbling.
  8. Add chicken bites to the skillet in batches, ensuring they do not touch.
  9. Cook for 3-4 minutes per side until golden brown and internal temperature reaches 165F.
  10. Remove from pan and let rest on a paper towel-lined plate for 2 minutes before serving.
