- 2 cups cooked turkey, shredded or cubed
- 1 tablespoon olive oil
- 1 medium onion, diced
- 3 medium carrots, sliced
- 2 stalks celery, sliced
- 3 cloves garlic, minced
- 8 cups chicken or turkey broth
- 2 cups wide egg noodles
- 1/4 cup fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, sautéing until softened (about 5-7 minutes).
- Stir in minced garlic and cook for 1 minute until fragrant.
- Pour in the broth and bring to a boil, then reduce heat to low and simmer for 10 minutes.
- Add the cooked turkey and stir to combine.
- Stir in the egg noodles and cook for 7-10 minutes or until noodles are tender.
- Remove from heat, stir in fresh parsley, and season with salt and pepper.
