Ingredients

  • 8 cups chicken or turkey broth
  • 2 cups wide egg noodles
  • 1/4 cup fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, sautéing until softened (about 5-7 minutes).
  2. Stir in minced garlic and cook for 1 minute until fragrant.
  3. Pour in the broth and bring to a boil, then reduce heat to low and simmer for 10 minutes.
  4. Add the cooked turkey and stir to combine.
