Ingredients

  • 1 lb chicken breast, cubed
  • 4 tbsp butter
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup frozen peas and carrots
  • 1 tsp dried thyme
  • 12 oz pasta (rotini or penne)
  • Salt and black pepper to taste

Instructions

  1. Boil a pot of salted water and cook pasta according to package directions; reserve 1 cup of pasta water before draining.
  2. In a large skillet, melt butter over medium heat and brown the chicken cubes until golden; remove chicken and set aside.
  3. In the same skillet, sauté onion and garlic until translucent.
  4. Stir in flour and cook for 2 minutes to create a roux.
  5. Gradually whisk in chicken broth and heavy cream until the sauce thickens and smooths.
  6. Stir in frozen peas, carrots, and thyme; simmer for 5 minutes.
  7. Return chicken to the pan and toss in the cooked pasta, adding reserved pasta water if needed to adjust consistency.
  8. Season with salt and pepper and serve immediately.
