A comforting one-pan meal featuring tender potato gnocchi and seared chicken breast tossed in a rich garlic and Parmesan cream sauce.

- 1 lb chicken breast, cubed
- 1 package (16 oz) potato gnocchi
- 2 cups heavy cream
- 1/2 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 2 cups fresh baby spinach
- 2 tbsp butter
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh parsley, chopped
Instructions
- Heat olive oil and butter in a large skillet over medium-high heat.
- Season chicken with salt and pepper, then sear for 5-7 minutes until golden brown. Remove chicken from pan.
- Reduce heat to medium and sauté minced garlic for 1 minute.
- Pour in heavy cream and simmer for 3-4 minutes until slightly thickened.
- Whisk in Parmesan cheese until smooth.
- Add the cooked chicken and gnocchi to the skillet.
- Simmer for 3-5 minutes until gnocchi are tender.
- Stir in baby spinach until wilted, then garnish with parsley.
