- 1 cup pumpkin puree
- 3/4 cup granulated sugar
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- 2 cups heavy cream
- 1 cup whole milk
- 1 tbsp vanilla extract
- 1/2 cup toasted walnuts, chopped
Instructions
- Toast walnuts in a skillet over medium heat for 3-5 minutes until fragrant.
- Whisk pumpkin puree, sugar, cinnamon, ginger, and nutmeg in a bowl until smooth.
- Stir in heavy cream, milk, and vanilla extract until combined.
- Chill the mixture in the refrigerator for at least 2 hours.
- Churn the chilled base in an ice cream maker according to manufacturer instructions.
- Fold in the toasted walnuts during the last minute of churning.
- Transfer to a container and freeze for 4-6 hours until firm.
