Ingredients

  • 3/4 cup granulated sugar
  • 1 tsp ground cinnamon

  • 2 cups heavy cream
  • 1 cup whole milk
  • 1 tbsp vanilla extract
  • 1/2 cup toasted walnuts, chopped

Instructions

  1. Toast walnuts in a skillet over medium heat for 3-5 minutes until fragrant.
  2. Whisk pumpkin puree, sugar, cinnamon, ginger, and nutmeg in a bowl until smooth.
  3. Stir in heavy cream, milk, and vanilla extract until combined.
  4. Chill the mixture in the refrigerator for at least 2 hours.
  5. Churn the chilled base in an ice cream maker according to manufacturer instructions.
  6. Fold in the toasted walnuts during the last minute of churning.
  7. Transfer to a container and freeze for 4-6 hours until firm.
