Ingredients

  • 12 oz penne or fusilli pasta
  • 2 cans (5 oz each) tuna in olive oil, drained
  • 1/2 cup red pesto (sun-dried tomato pesto)
  • 1/2 cup heavy cream
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil and cook pasta until slightly under al dente.
  2. Reserve 1 cup of pasta water before draining the noodles.
  3. Heat 2 tablespoons of olive oil in a large skillet over medium heat and sauté minced garlic for 1 minute until fragrant.
  4. Stir in the red pesto and cook for 2 minutes to release the aromas.
  5. Pour in the heavy cream and simmer gently for 1-2 minutes until the sauce is smooth and orange.
  6. Fold in the drained tuna, stirring gently to keep some flakes intact.
  7. Add the cooked pasta and a splash of reserved pasta water to the skillet. Toss over medium heat for 2 minutes until the sauce clings to the pasta.
  8. Remove from heat and stir in the Parmesan cheese and fresh parsley. Season with salt and pepper.
