Ingredients

  • 1 can (13.5 oz) coconut milk
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 34 pandan leaves (or a few drops of pandan extract)
  • 1/4 cup rice flour
  • 2 large eggs

Instructions

  1. In a mixing bowl, whisk together the coconut milk, sugar, and salt until dissolved.
  2. If using fresh pandan leaves, blend them with a little water and strain to extract the juice; mix this into the coconut mixture.
  3. In another bowl, whisk the rice flour and eggs until well combined; gradually add to the coconut mixture while stirring to avoid lumps.
  4. Lightly grease your molds and pour in the custard mixture about ¾ full.
  5. Bake in a preheated oven at 350°F (175°C) for 30-40 minutes or until set and slightly golden on top.
