A savory, slow-cooked beef roast inspired by steakhouse flavors, featuring a caramelized sear and rich brown gravy.

- 3–4 lb beef chuck roast
- 2 tbsp vegetable oil
- 1 large yellow onion, sliced
- 4 cloves garlic, minced
- 2 cups beef broth
- 2 tbsp Worcestershire sauce
- 1 lb carrots, cut into chunks
- 1 lb potatoes, cut into chunks
- 1 tsp salt
- 1 tsp black pepper
Instructions
- Heat oil in a large skillet over high heat and sear the beef on all sides until browned.
- In the same pan, sauté sliced onions and minced garlic for 2 minutes.
- Deglaze the pan with a splash of beef broth, scraping up the browned bits.
- Place carrots and potatoes in the bottom of the slow cooker.
- Set the seared beef on top of the vegetables.
- Mix remaining beef broth, Worcestershire sauce, salt, and pepper, then pour around the beef.
- Cover and cook on LOW for 8 hours or HIGH for 4-5 hours until meat is tender.
