Instructions
- Preheat the oven to 350°F and line a sheet with parchment.

- Cream butter with both sugars until fluffy.
- Add egg, vanilla, and lemon zest, mixing well.
- Gradually mix in dry ingredients until just combined.
- Fold in carrots and optional mix‑ins.
- Drop spoonfuls onto sheet and bake 12‑15 minutes.
- Cool on sheet for 5 minutes, then transfer to rack to finish cooling.
