  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • ½ cup sour cream
  • 1 tbsp lemon juice
  • 1 cup fresh raspberries (divided)
  • Additional sugar for raspberry topping (optional)

Instructions

  1. Preheat oven to 325°F (165°C). Mix graham cracker crumbs with melted butter and press into heart-shaped molds. Bake for 10 minutes and let cool.
  2. Beat cream cheese until smooth. Gradually add sugar, mixing until fully incorporated. Add sour cream and lemon juice; mix until creamy.
  3. Mash half the raspberries in a bowl and fold into the cheesecake mixture.
  4. Spoon filling over cooled crusts in each mold and smooth the tops. Bake for 25-30 minutes until edges are set but centers jiggle slightly. Cool at room temperature before refrigerating for at least 4 hours.
  5. Top with remaining mashed raspberries mixed with sugar if desired before serving.
