- 4–5 lb sugar pumpkin, peeled and cubed
- 1/2 cup water
- 1 tsp salt
Instructions
- Cut the pumpkin in half, remove seeds and pulp, and peel the skin off.
- Cut the pumpkin flesh into uniform 1-inch cubes.
- Place pumpkin cubes in the slow cooker with water and salt.
- Cover and cook on low for 8 hours or high for 4 hours until tender.
- Drain the excess liquid from the pot using a colander.
- Transfer the cooked pumpkin to a blender or food processor.
- Blend until completely smooth, adding small amounts of cooking liquid if needed for consistency.
