  • 5 dried red chilies (Ancho or Guajillo)
  • 4 garlic cloves
  • 1 medium onion, chopped
  • 2 cups masa harina
  • 1 cup low-sodium chicken broth
  • 1 tsp salt
  • 1 tsp ground cumin
  • 1 tsp freshly ground black pepper

Instructions

  1. Cut the pork shoulder into chunks, season with salt, and sear in a pot over medium-high heat until browned. Remove and set aside.
  2. Toast the dried chilies in a skillet until fragrant, then soak them in hot water for 15 minutes. Blend with garlic, onion, cumin, and some soaking liquid until smooth.
  3. Return the pork to the pot with the chili sauce and enough chicken broth to cover. Simmer on low for about two hours until tender.
  4. Combine masa harina, baking powder, and salt in a bowl. Gradually mix in chicken broth until achieving soft dough.
  5. Soak corn husks in warm water until pliable. Spread masa on each husk, add pork filling, fold sides over, and roll tightly.
  6. Arrange tamales upright in a steamer basket lined with corn husks. Steam for 1 hour or until masa separates easily from the husk.
