- 1 medium onion, chopped
- 2 cups masa harina
- 1 cup low-sodium chicken broth

- 1 tsp freshly ground black pepper
Instructions
- Cut the pork shoulder into chunks, season with salt, and sear in a pot over medium-high heat until browned. Remove and set aside.
- Toast the dried chilies in a skillet until fragrant, then soak them in hot water for 15 minutes. Blend with garlic, onion, cumin, and some soaking liquid until smooth.
- Return the pork to the pot with the chili sauce and enough chicken broth to cover. Simmer on low for about two hours until tender.
- Combine masa harina, baking powder, and salt in a bowl. Gradually mix in chicken broth until achieving soft dough.
- Soak corn husks in warm water until pliable. Spread masa on each husk, add pork filling, fold sides over, and roll tightly.
- Arrange tamales upright in a steamer basket lined with corn husks. Steam for 1 hour or until masa separates easily from the husk.
