- 12 manicotti pasta shells
- 15 oz ricotta cheese
- 1 cup fresh spinach (or ½ cup frozen, thawed and drained)
- 1 large egg
- 2 cloves garlic, minced
- ½ teaspoon dried basil
- ½ teaspoon dried oregano
- Salt and pepper to taste
- 2 cups marinara sauce (homemade or store-bought)
- 1 cup shredded mozzarella cheese
- ¼ cup grated Parmesan cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the manicotti shells according to package instructions until al dente. Drain and set aside to cool.
- In a bowl, mix together ricotta cheese, spinach, egg, garlic, basil, oregano, salt, and pepper until well combined.
- Carefully fill each manicotti shell with the ricotta mixture using a pastry bag or spoon.
- In a saucepan over medium heat, combine marinara sauce ingredients and simmer for about 15 minutes.
- Spread half of the marinara sauce on the bottom of a baking dish. Arrange filled manicotti on top and cover with remaining sauce.
- Sprinkle mozzarella and Parmesan over the top, then cover with foil.
- Bake for 25 minutes covered; remove foil and bake an additional 10-15 minutes until cheese is bubbly and golden brown.
