  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 ripe avocado, diced
  • Juice of 1 lime
  • ¼ cup fresh cilantro, chopped

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Cut the cauliflower into bite-sized florets and toss with olive oil, cumin, chili powder, salt, and black pepper until evenly coated.
  3. Spread the seasoned cauliflower on the baking sheet and roast for about 25-30 minutes until golden brown and tender.
  4. While the cauliflower roasts, cook brown rice according to package instructions (approximately 30-40 minutes).
  5. In serving bowls, layer cooked rice at the bottom followed by roasted cauliflower, black beans, cherry tomatoes, diced avocado, and chopped cilantro.
  6. Drizzle fresh lime juice over each bowl before serving immediately.
