  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 can (5 oz) tuna, packed in water or olive oil, drained
  • 2 medium fresh lemons (juice and zest)
  • 1/4 cup tahini
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 2 tbsp extra virgin olive oil
  • Salt & pepper to taste

Instructions

  1. In a large mixing bowl, combine the rinsed chickpeas and drained tuna; break the tuna into smaller pieces.
  2. Add chopped cherry tomatoes, diced cucumber, and sliced red onion to the bowl.
  3. In a separate bowl, whisk together tahini, lemon juice and zest, olive oil, salt, and pepper until smooth. If too thick, add water gradually until desired consistency is reached.
  4. Pour the dressing over the salad mixture and toss gently until well-coated.
  5. Taste and adjust seasoning if necessary; serve chilled or at room temperature.
