- 1 can (15 oz) chickpeas, rinsed and drained
- 1 can (5 oz) tuna, packed in water or olive oil, drained
- 2 medium fresh lemons (juice and zest)
- 1/4 cup tahini
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 2 tbsp extra virgin olive oil
- Salt & pepper to taste
Instructions
- In a large mixing bowl, combine the rinsed chickpeas and drained tuna; break the tuna into smaller pieces.
- Add chopped cherry tomatoes, diced cucumber, and sliced red onion to the bowl.
- In a separate bowl, whisk together tahini, lemon juice and zest, olive oil, salt, and pepper until smooth. If too thick, add water gradually until desired consistency is reached.
- Pour the dressing over the salad mixture and toss gently until well-coated.
- Taste and adjust seasoning if necessary; serve chilled or at room temperature.
