- 14 oz firm tofu, drained and pressed
- 2 tbsp olive oil
- 2 tbsp taco seasoning
- 1 cup brown rice (uncooked)
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup bell peppers, diced
- 1 cup corn (frozen or fresh)
- 1 avocado, diced
- ½ cup sour cream or Greek yogurt
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Cut pressed tofu into cubes and place in a mixing bowl.
- Add olive oil and taco seasoning; toss until evenly coated. Spread tofu on the baking sheet.
- Bake for 25-30 minutes until golden brown and crispy, flipping halfway.
- Cook brown rice according to package instructions.
