  • 14 oz firm tofu, drained and pressed
  • 2 tbsp olive oil
  • 2 tbsp taco seasoning
  • 1 cup brown rice (uncooked)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup bell peppers, diced
  • 1 cup corn (frozen or fresh)
  • 1 avocado, diced
  • ½ cup sour cream or Greek yogurt

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Cut pressed tofu into cubes and place in a mixing bowl.
  3. Add olive oil and taco seasoning; toss until evenly coated. Spread tofu on the baking sheet.
  4. Bake for 25-30 minutes until golden brown and crispy, flipping halfway.
  5. Cook brown rice according to package instructions.
  6. To assemble, start with brown rice as the base, layer baked tofu, black beans, veggies, avocado, and a dollop of sour cream.
