Ingredients

  • 1 lb Yukon Gold potatoes, cubed
  • 3 large carrots, sliced into rounds
  • 2 medium zucchini, sliced into thick rounds
  • 3 tbsp extra virgin olive oil
  • 4 cloves garlic, minced
  • 1 tsp dried rosemary
  • 1 tsp dried thyme
  • 1 tsp sea salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cube potatoes and carrots into half-inch pieces; slice zucchini into thick rounds.
  3. In a large bowl, toss all vegetables with olive oil, minced garlic, rosemary, thyme, salt, and pepper.
  4. Spread vegetables in a single layer on a large baking sheet.
  5. Roast for 20 minutes, then remove from oven and stir.
  6. Roast for an additional 15-20 minutes until potatoes are golden and tender.
