Ingredients

  • 1 cup orzo pasta
  • 1 cup cherry tomatoes
  • 1 cup diced cucumber
  • 1/2 cup sliced kalamata olives
  • 1/2 cup crumbled feta cheese
  • 1/4 cup diced red onion
  • 1/4 cup extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp chopped fresh parsley

Instructions

  1. Boil orzo until al dente, then rinse under cold water.
  2. Dice tomatoes, cucumber, and onions; slice olives.
  3. Whisk together olive oil, lemon juice, oregano, salt, and pepper.
  4. Combine pasta and vegetables in bowl; toss with dressing.
  5. Add feta and parsley, fold gently.
  6. Cover, refrigerate 30 minutes, then serve chilled.
