Ingredients

  • 1.5 lbs chicken breast, diced
  • 3 large Yukon Gold potatoes, peeled and cubed
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1/2 cup heavy cream
  • 1 tsp dried thyme
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion, carrots, and celery until softened (about 5 minutes).
  3. Add diced chicken and brown on all sides.
  4. Stir in minced garlic and cook for 1 minute.
  5. Pour in chicken broth and add cubed potatoes and thyme.
  6. Bring to a boil, then simmer on low for 20 minutes until potatoes are tender.
  7. Stir in heavy cream and season with salt and pepper.
  8. Remove from heat and serve immediately.
