- 1.5 lbs chicken breast, diced
- 3 large Yukon Gold potatoes, peeled and cubed
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1/2 cup heavy cream
- 1 tsp dried thyme
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Sauté onion, carrots, and celery until softened (about 5 minutes).
- Add diced chicken and brown on all sides.
- Stir in minced garlic and cook for 1 minute.
- Pour in chicken broth and add cubed potatoes and thyme.
- Bring to a boil, then simmer on low for 20 minutes until potatoes are tender.
- Stir in heavy cream and season with salt and pepper.
- Remove from heat and serve immediately.
