- 1.5 lbs boneless skinless chicken breasts, cubed
- 2 tbsp olive oil
- 2 tbsp Cajun seasoning
- 1 medium onion, diced
- 2 stalks celery, diced
- 1 red bell pepper, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups fresh spinach
- Salt and pepper to taste
Instructions
- Season chicken cubes with 1 tablespoon of Cajun seasoning.
- Heat olive oil in a large pot over medium-high heat and sear chicken until browned; remove and set aside.
- In the same pot, sauté onion, celery, and bell pepper until translucent (about 5 minutes).
- Stir in minced garlic and the remaining Cajun seasoning, cooking for 1 minute more.
- Pour in chicken broth and scrape the bottom of the pot to release brown bits.
- Return chicken to the pot and simmer for 15-20 minutes until cooked through.
- Reduce heat to low and slowly whisk in heavy cream.
- Fold in fresh spinach and stir until wilted. Serve warm.
