Ingredients

  • 1.5 lbs boneless skinless chicken breasts, cubed
  • 2 tbsp olive oil
  • 2 tbsp Cajun seasoning
  • 1 medium onion, diced
  • 2 stalks celery, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. Season chicken cubes with 1 tablespoon of Cajun seasoning.
  2. Heat olive oil in a large pot over medium-high heat and sear chicken until browned; remove and set aside.
  3. In the same pot, sauté onion, celery, and bell pepper until translucent (about 5 minutes).
  4. Stir in minced garlic and the remaining Cajun seasoning, cooking for 1 minute more.
  5. Pour in chicken broth and scrape the bottom of the pot to release brown bits.
  6. Return chicken to the pot and simmer for 15-20 minutes until cooked through.
  7. Reduce heat to low and slowly whisk in heavy cream.
  8. Fold in fresh spinach and stir until wilted. Serve warm.
