Description

A hearty, slow-cooked soup featuring tender shredded chicken, black beans, corn, and zesty spices. Topped with fresh avocado and tortilla strips for a complete meal.


Ingredients

  • 1.5 lbs boneless skinless chicken breasts
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp ground cumin
  • 1 tbsp chili powder
  • 1 cup frozen corn
  • 1 can (15 oz) black beans, rinsed
  • 2 tbsp lime juice
  • Tortilla strips, avocado, and cilantro for garnish

Instructions

  1. Place chicken, tomatoes, onion, and garlic in the slow cooker.
  2. Stir in cumin and chili powder to coat the ingredients.
  3. Pour in chicken broth until all ingredients are covered.
  4. Cover and cook on Low for 6-8 hours or High for 3-4 hours.
  5. Remove chicken and shred using two forks on a cutting board.
  6. Return shredded chicken to the pot and stir in corn and black beans.
  7. Cook for another 20 minutes to heat through.
  8. Stir in lime juice and serve with desired toppings.
