- 1 lb ground beef
- 1 medium onion, diced
- 3 medium carrots, sliced
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 3 medium potatoes, peeled and cubed
- 6 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Brown the ground beef in a large pot over medium-high heat until fully cooked. Drain excess grease if necessary.
- Add diced onion, carrots, and celery to the pot. Sauté for 5-7 minutes until softened.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Pour in beef broth and diced tomatoes with their juices. Stir to deglaze the bottom of the pot.
- Add cubed potatoes, dried thyme, salt, and black pepper.
- Bring to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes until potatoes are tender.
- Remove from heat and let sit for 5 minutes before serving.
