- 6 cups vegetable broth
- 3 medium potatoes, peeled and cubed
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, sautéing for 6-8 minutes until softened.
- Stir in minced garlic and dried thyme, cooking for 1 minute until fragrant.
- Add diced tomatoes with their juices and cook for 2-3 minutes to integrate flavors.
- Pour in vegetable broth and add cubed potatoes. Bring to a boil, then reduce heat to low.
- Simmer uncovered for 15-20 minutes or until potatoes are fork-tender.
- Season with salt and black pepper to taste.
- Remove from heat and stir in fresh parsley before serving.
