- 1 lb ground beef
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 cup frozen corn
- 1 can (14.5 oz) diced tomatoes
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup beef broth
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups shredded cheddar cheese
Instructions
- Brown the ground beef in a skillet over medium heat until fully cooked. Drain excess grease.
- Add diced onions and minced garlic to the skillet and sauté for 3-5 minutes until softened.
- Transfer the beef mixture to a slow cooker.
- Stir in kidney beans, corn, diced tomatoes, beef broth, chili powder, cumin, salt, and pepper.
- Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours.
- Sprinkle shredded cheddar cheese over the top and cover for 30 minutes until the cheese is melted and bubbly.
