Description

A rustic, hearty blend of ground beef, kidney beans, and corn slow-cooked to savory perfection and topped with melted cheddar cheese.


Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup frozen corn
  • 1 can (14.5 oz) diced tomatoes
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups shredded cheddar cheese

Instructions

  1. Brown the ground beef in a skillet over medium heat until fully cooked. Drain excess grease.
  2. Add diced onions and minced garlic to the skillet and sauté for 3-5 minutes until softened.
  3. Transfer the beef mixture to a slow cooker.
  4. Stir in kidney beans, corn, diced tomatoes, beef broth, chili powder, cumin, salt, and pepper.
  5. Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours.
  6. Sprinkle shredded cheddar cheese over the top and cover for 30 minutes until the cheese is melted and bubbly.
