- 8 oz penne or fusilli pasta
- 1 lb chicken breast, cut into strips
- 2 tbsp olive oil (for marinating)
- 1 tbsp olive oil (for cooking)
- 3 cloves garlic, minced
- 2 tbsp lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
- ½ cup tzatziki sauce
- ¼ cup crumbled feta cheese
- ¼ cup Kalamata olives, pitted and sliced
- 1 cup bell peppers, sliced (mixed colors)
- 1 cup cucumber, diced
Instructions
- Marinate the chicken by mixing olive oil, garlic, lemon juice, oregano, salt, and pepper in a bowl. Add chicken strips and let sit for at least 15 minutes.
- Cook the pasta according to package instructions until al dente. Drain and set aside while reserving about 1 cup of pasta water.
- Heat olive oil in a large skillet over medium heat. Add marinated chicken and cook for about 6-7 minutes on each side until golden brown. Remove from heat and slice.
- In the same skillet, sauté sliced bell peppers for about 3-4 minutes until tender. Add cooked pasta and sliced chicken to the skillet.
- Gradually add reserved pasta water as needed to create a light sauce coating all ingredients evenly. Stir until heated through.
- Serve topped with tzatziki sauce, crumbled feta cheese, Kalamata olives, and diced cucumbers.
