Description
Festive cheesecake bars featuring a buttery graham cracker crust and a beautiful marble swirl of classic cheesecake and spiced pumpkin puree.

- 1.5 cups graham cracker crumbs
- 6 tbsp melted unsalted butter
- 2 tbsp granulated sugar
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 2 large eggs, room temperature
- 1 tsp vanilla extract
- 1/2 cup pumpkin puree
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
Instructions
- Preheat your oven to 325F and line an 8×8 inch baking pan with parchment paper.
- Mix graham cracker crumbs, melted butter, and 2 tbsp sugar. Press firmly into the pan and bake for 10 minutes. Let cool slightly.
- Beat softened cream cheese and 1 cup sugar until smooth.
- Add eggs one at a time, then stir in vanilla extract. Divide this batter into two equal portions.
- Mix pumpkin puree, cinnamon, and nutmeg into one portion of the batter until orange.
- Spread the plain batter over the crust, then drop spoonfuls of pumpkin batter on top. Swirl with a toothpick.
- Bake for 35-40 minutes until edges are set but the center still jiggles slightly.
- Cool to room temperature, then refrigerate for at least 4 hours before slicing.
