- 24 chocolate sandwich cookies (crushed)
- 4 tbsp unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 6 oz high-quality dark chocolate, melted
- 1/2 cup sour cream
- 1 tsp vanilla extract
- 3 large eggs
- 1/2 cup heavy cream
- 4 oz dark chocolate (for ganache)
Instructions
- Preheat oven to 325F (160C) and grease a 9-inch springform pan.
- Mix crushed cookies with melted butter and press into the pan; bake for 8 minutes.
- Beat cream cheese and sugar until smooth.
- Stir in melted chocolate, sour cream, and vanilla extract on low speed.
- Add eggs one at a time, mixing just until combined.
- Pour batter into the pan and bake in a water bath for 50-60 minutes.
- Cool to room temperature and refrigerate for at least 6 hours.
- Heat heavy cream and pour over chocolate bits to create ganache; spread over the chilled cake.
