Description

A vibrant, one-pot meal combining tender chicken, colorful bell peppers, and fluffy rice infused with smoky fajita seasonings.


Ingredients

  • 1 lb boneless skinless chicken breasts, cubed
  • 1 cup long-grain white rice, rinsed
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1.25 cups chicken broth
  • 2 tablespoons olive oil
  • 1 tablespoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh lime juice
  • Fresh cilantro for garnish

Instructions

  1. Set the Instant Pot to Sauté mode and add olive oil.
  2. Add onions and bell peppers, sautéing for 3-5 minutes until softened.
  3. Stir in minced garlic and cook for 30 seconds.
  4. Add cubed chicken and sear until lightly browned on all sides.
  5. Pour in 1/4 cup of chicken broth and scrape the bottom of the pot to remove all browned bits.
  6. Stir in cumin, paprika, salt, and black pepper.
  7. Add rinsed rice in an even layer over the chicken.
  8. Pour the remaining chicken broth and lime juice over the rice without stirring.
  9. Close the lid, set the valve to Sealing, and cook on High Pressure for 8 minutes.
  10. Allow a 5-minute natural pressure release, then manually release the remaining steam.
  11. Gently fluff the rice and stir in the chicken and vegetables.
  12. Garnish with fresh cilantro before serving.
