- 1.5 lbs fresh green beans, trimmed
- 4 tbsp unsalted butter, divided
- 1/4 cup all-purpose flour
- 1 cup heavy cream
- 2 cups sharp cheddar cheese, shredded
- 3 cloves garlic, minced
- 1 tsp onion powder
- 1/2 tsp black pepper
- Salt to taste
Instructions
- Blanch green beans in boiling salted water for 3 minutes, then immediately plunge into an ice bath.
- Melt 2 tbsp butter in a saucepan over medium heat; whisk in flour and cook for 2 minutes.
- Gradually whisk in heavy cream and simmer for 5 minutes until thickened.
- Remove from heat; stir in 1 cup of cheddar, onion powder, and pepper. Fold in drained green beans.
- Transfer bean mixture to a greased baking dish.
- Mix remaining 2 tbsp melted butter, minced garlic, and remaining 1 cup of cheddar. Spread over the beans.
- Bake at 375F for 20-25 minutes until the topping is golden brown.
