  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 3 large eggs, at room temperature
  • 1 tsp pure vanilla extract
  • 4 medium Granny Smith apples, peeled and sliced
  • ½ cup salted caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C). Mix graham cracker crumbs with melted butter until combined. Press into the bottom of a springform pan to form the crust.
  2. In a bowl, beat cream cheese and sugar until smooth. Add eggs one by one, mixing well after each addition. Stir in vanilla extract.
  3. Sauté sliced apples in a skillet over medium heat with sugar and cinnamon until tender (about 5-7 minutes).
  4. Pour half of the cheesecake mixture over the crust, add sautéed apples, drizzle with caramel sauce, then top with remaining cheesecake mixture.
  5. Bake for about 50 minutes until set around edges but slightly jiggly in center. Turn off oven and cool inside for one hour before transferring to room temperature.
  6. Refrigerate for at least four hours or overnight before serving. Drizzle more caramel sauce on top before slicing.
