  • 4 salmon fillets (6 oz each)
  • 1 cup full-fat coconut milk
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat a large skillet over medium heat. Add olive oil.
  2. Season salmon fillets with salt and pepper. Sear skin-side down for 4-5 minutes until golden brown; flip and cook for another 3-4 minutes. Remove from skillet.
  3. In the same skillet, sauté minced garlic until fragrant (about 1 minute). Add coconut milk, lemon juice, oregano, and salt. Stir well.
  4. Incorporate cherry tomatoes and spinach into the sauce; cook until spinach wilts (about 2 minutes).
  5. Return salmon to the skillet, spooning sauce over each fillet. Simmer for an additional 2 minutes before serving.
