  • 8 oz flat rice noodles
  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons tamarind paste
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • Juice of 1 lime
  • 2 tablespoons vegetable oil (divided)
  • 1 cup bean sprouts
  • 1 cup carrots, julienned
  • 4 green onions, chopped
  • Fresh cilantro for garnish
  • Lime wedges for serving

Instructions

  1. Soak the rice noodles in hot water for about 15 minutes until soft. Drain and set aside.
  2. In a large wok over medium-high heat, heat 1 tablespoon of oil. Add shrimp and cook until pink (3-4 minutes). Remove from pan.
  3. Add remaining oil to the pan, sauté carrots and green onions until tender (2-3 minutes).
  4. In a bowl, mix tamarind paste, fish sauce, sugar, and lime juice. Pour into the pan with vegetables.
  5. Add drained noodles and shrimp back to the pan; stir gently until heated through (2-3 minutes).
  6. Remove from heat and top with bean sprouts and cilantro. Serve hot with lime wedges.
