- 8 oz flat rice noodles
- 1 lb shrimp, peeled and deveined
- 2 tablespoons tamarind paste
- 2 tablespoons fish sauce
- 1 tablespoon sugar
- Juice of 1 lime
- 2 tablespoons vegetable oil (divided)
- 1 cup bean sprouts
- 1 cup carrots, julienned
- 4 green onions, chopped
- Fresh cilantro for garnish
- Lime wedges for serving
Instructions
- Soak the rice noodles in hot water for about 15 minutes until soft. Drain and set aside.
- In a large wok over medium-high heat, heat 1 tablespoon of oil. Add shrimp and cook until pink (3-4 minutes). Remove from pan.
- Add remaining oil to the pan, sauté carrots and green onions until tender (2-3 minutes).
- In a bowl, mix tamarind paste, fish sauce, sugar, and lime juice. Pour into the pan with vegetables.
- Add drained noodles and shrimp back to the pan; stir gently until heated through (2-3 minutes).
- Remove from heat and top with bean sprouts and cilantro. Serve hot with lime wedges.
