- 4 cups corn kernels (fresh or frozen)
- 4 tbsp butter
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 tsp smoked paprika
- 2 tbsp fresh lime juice
- 1/2 cup crumbled Cotija cheese
- Fresh cilantro for garnish
Instructions
- Melt butter in a large pot over medium-high heat.
- Add corn and cook until charred and golden brown.
- Stir in minced garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and simmer for 10 minutes.
- Blend half of the soup using an immersion blender until smooth.
- Stir in heavy cream and smoked paprika over low heat.
- Remove from heat and stir in lime juice and Cotija cheese.
- Garnish with fresh cilantro and serve hot.
