Ingredients

  • 4 cups corn kernels (fresh or frozen)
  • 4 tbsp butter
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp smoked paprika
  • 2 tbsp fresh lime juice
  • 1/2 cup crumbled Cotija cheese
  • Fresh cilantro for garnish

Instructions

  1. Melt butter in a large pot over medium-high heat.
  2. Add corn and cook until charred and golden brown.
  3. Stir in minced garlic and cook for 1 minute until fragrant.
  4. Pour in chicken broth and simmer for 10 minutes.
  5. Blend half of the soup using an immersion blender until smooth.
  6. Stir in heavy cream and smoked paprika over low heat.
  7. Remove from heat and stir in lime juice and Cotija cheese.
  8. Garnish with fresh cilantro and serve hot.
