Ingredients

  • 1.5 lbs boneless skinless chicken breast, cubed
  • 1 cup long-grain white rice, rinsed
  • 3 cups chicken broth
  • 3 cups fresh broccoli florets
  • 2 tablespoons butter
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 1.5 tablespoons curry powder
  • 1/2 cup heavy cream
  • Salt and black pepper to taste

Instructions

  1. Heat butter in a large pot over medium-high heat and brown the cubed chicken on all sides. Remove chicken from the pot and set aside.
  2. In the same pot, sauté the diced onion and minced garlic until the onion is translucent.
  3. Stir in the curry powder and cook for 60 seconds to toast the spices.
  4. Return the chicken to the pot and stir in the rinsed uncooked rice, stirring until grains are coated in butter.
  5. Pour in the chicken broth and bring to a simmer. Cover with a tight lid and reduce heat to low, cooking for 15-20 minutes.
  6. Gently stir in the broccoli florets and cover again, simmering for an additional 5-7 minutes until broccoli is tender-crisp.
  7. Remove from heat and stir in the heavy cream. Season with salt and pepper before serving.
