- 1.5 lbs boneless skinless chicken breast, cubed
- 1 cup long-grain white rice, rinsed
- 3 cups chicken broth
- 3 cups fresh broccoli florets
- 2 tablespoons butter
- 1 medium onion, finely diced
- 3 cloves garlic, minced
- 1.5 tablespoons curry powder
- 1/2 cup heavy cream
- Salt and black pepper to taste
Instructions
- Heat butter in a large pot over medium-high heat and brown the cubed chicken on all sides. Remove chicken from the pot and set aside.
- In the same pot, sauté the diced onion and minced garlic until the onion is translucent.
- Stir in the curry powder and cook for 60 seconds to toast the spices.
- Return the chicken to the pot and stir in the rinsed uncooked rice, stirring until grains are coated in butter.
- Pour in the chicken broth and bring to a simmer. Cover with a tight lid and reduce heat to low, cooking for 15-20 minutes.
- Gently stir in the broccoli florets and cover again, simmering for an additional 5-7 minutes until broccoli is tender-crisp.
- Remove from heat and stir in the heavy cream. Season with salt and pepper before serving.
