- 1 lb ground beef or pork
- 3 cloves garlic, minced
- ¼ cup soy sauce
- 2 tbsp gochujang (Korean chili paste)
- ½ onion, finely chopped
- 1 tsp salt
- ½ tsp black pepper
- 2 medium carrots, chopped
- 1 medium zucchini, chopped
- 1 tbsp olive oil
- ½ cup pineapple chunks (optional)
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, mix ground meat with garlic, soy sauce, gochujang, onion, salt, and pepper until just combined.
- Form small meatballs (about 1 inch in diameter) and place on a baking sheet lined with parchment paper.
- Toss carrots and zucchini in olive oil, salt, and pepper; arrange around the meatballs on the same baking sheet.
- Bake for 20-25 minutes until meatballs are cooked through (internal temperature should reach 160°F) and vegetables are tender.
- If using pineapple, add during the last 5 minutes of baking for caramelization.
