  • 1 lb ground beef or pork
  • 3 cloves garlic, minced
  • ¼ cup soy sauce
  • 2 tbsp gochujang (Korean chili paste)
  • ½ onion, finely chopped
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 medium carrots, chopped
  • 1 medium zucchini, chopped
  • 1 tbsp olive oil
  • ½ cup pineapple chunks (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, mix ground meat with garlic, soy sauce, gochujang, onion, salt, and pepper until just combined.
  3. Form small meatballs (about 1 inch in diameter) and place on a baking sheet lined with parchment paper.
  4. Toss carrots and zucchini in olive oil, salt, and pepper; arrange around the meatballs on the same baking sheet.
  5. Bake for 20-25 minutes until meatballs are cooked through (internal temperature should reach 160°F) and vegetables are tender.
  6. If using pineapple, add during the last 5 minutes of baking for caramelization.
