Description

A simple and savory one-pan meal featuring golden roasted potatoes and Italian sausage, finished with a sweet and tangy balsamic glaze reduction.

Ingredients

Scale
  • 1 lb Italian sausage, sliced into rounds
  • 1.5 lbs Yukon Gold potatoes, cut into 1/2 inch cubes
  • 3 cloves garlic, minced
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup balsamic vinegar
  • 2 tablespoons maple syrup or honey

Instructions

  1. Preheat your oven to 400°F and line a large baking sheet with parchment paper.
  2. In a large mixing bowl, toss the cubed potatoes and minced garlic with olive oil, oregano, salt, and pepper until evenly coated.
  3. Spread the potatoes in a single layer on the prepared baking sheet and nestle the sliced sausage rounds among them.
  4. Roast in the oven for 20 to 25 minutes, or until the potatoes are tender and the sausage is browned.
  5. While the pan is roasting, whisk together the balsamic vinegar and maple syrup in a small bowl.
  6. Remove the pan from the oven and drizzle the balsamic mixture over the ingredients, tossing gently to coat.
  7. Return the pan to the oven for another 5 to 10 minutes until the glaze is thick and bubbling.
  8. Let the dish rest for 5 minutes before serving to allow the glaze to set.
