- 1.5 lbs chicken breast, cubed
- 2 medium zucchinis, diced
- 1 cup corn (fresh or frozen)
- 1 onion, diced
- 1 red bell pepper, diced
- 1 tbsp smoked paprika
- 1 tsp ground cumin
- 2 tbsp olive oil
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- Season chicken cubes with salt, pepper, and a pinch of paprika.
- Heat 1 tbsp oil in a large skillet over medium-high heat; sear chicken until golden and cooked through, then remove to a plate.
- Add remaining oil to the pan and sauté onions and bell peppers until translucent.
- Stir in the corn and zucchini, cooking for 5 minutes until slightly charred.
- Stir in smoked paprika, cumin, and lime juice, scraping the pan bottom.
- Return chicken to the pan and toss everything together for 2 more minutes.
