- 2 lbs bone-in, skin-on chicken thighs
- 2 cups classic Coca Cola
- 1/4 cup soy sauce
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons olive oil
- Green onions for garnish
- Sesame seeds for garnish
Instructions
- Heat olive oil in a skillet over medium-high heat and sear chicken thighs until golden brown on both sides.
- Sauté minced garlic and grated ginger in the same pan for 30 seconds until fragrant.
- Whisk together Coca Cola and soy sauce in a bowl.
- Place seared chicken into the slow cooker and pour the soda mixture over the top.
- Cook on low for 6-8 hours or high for 3-4 hours until chicken is 165°F.
- Remove chicken and simmer the remaining liquid in a saucepan for 10 minutes until reduced to a thick glaze.
- Drizzle the glaze over the chicken and garnish with green onions and sesame seeds.
