Description

A festive Halloween twist on classic Italian bruschetta featuring a bold red tomato topping and spooky mozzarella accents on garlic-rubbed toasted baguette.


Ingredients

  • 1 baguette, sliced into 1/2 inch rounds
  • 6 Roma tomatoes, seeded and diced
  • 1/4 cup fresh basil, finely chopped
  • 3 cloves garlic, 2 minced and 1 whole for rubbing
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic glaze
  • 12 mozzarella pearls
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 400F.
  2. In a medium bowl, combine diced tomatoes, chopped basil, minced garlic, 2 tablespoons of olive oil, salt, and pepper. Let sit for 15 minutes.
  3. Brush each side of the baguette slices with the remaining olive oil.
  4. Place slices on a baking sheet and toast for 5-8 minutes until the edges are golden brown.
  5. Remove from oven and immediately rub the whole garlic clove over the top of each hot toast slice.
  6. Spoon approximately 1 tablespoon of the tomato mixture onto each slice.
  7. Place one mozzarella pearl on top of each slice to create a ghostly effect.
  8. Drizzle balsamic glaze over the assembled bruschetta before serving.
