A festive Halloween twist on classic Italian bruschetta featuring a bold red tomato topping and spooky mozzarella accents on garlic-rubbed toasted baguette.

- 1 baguette, sliced into 1/2 inch rounds
- 6 Roma tomatoes, seeded and diced
- 1/4 cup fresh basil, finely chopped
- 3 cloves garlic, 2 minced and 1 whole for rubbing
- 3 tablespoons extra virgin olive oil
- 2 tablespoons balsamic glaze
- 12 mozzarella pearls
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 400F.
- In a medium bowl, combine diced tomatoes, chopped basil, minced garlic, 2 tablespoons of olive oil, salt, and pepper. Let sit for 15 minutes.
- Brush each side of the baguette slices with the remaining olive oil.
- Place slices on a baking sheet and toast for 5-8 minutes until the edges are golden brown.
- Remove from oven and immediately rub the whole garlic clove over the top of each hot toast slice.
- Spoon approximately 1 tablespoon of the tomato mixture onto each slice.
- Place one mozzarella pearl on top of each slice to create a ghostly effect.
- Drizzle balsamic glaze over the assembled bruschetta before serving.
